step one: preheat your oven and line a baking tray with baking paper/parchment paper.
step two: in a large mixing bowl, add butter. put this in the microwave and melt in 30 second intervals, stirring in between every 30 seconds until the butter has melted completely.
step three: once the butter has melted, add brown sugar and granulated sugar and mix those in until the sugar has dissolved in the warm butter.
step four: once the butter and sugar mixture has cooled slightly, add egg and vanilla extract and mix those in. make sure the mixture is not too hot before adding the egg.


step five: add flour, baking powder and baking soda to the egg mixture. gently fold the mixture in, make sure not to over mix at this stage.
step six: once the flour has been folded in, the dough should be thick and sticky.


step six: add chocolate to the mixture and fold that in.
step seven: add all of the mixture to the baking tray that you lined earlier. spread it out into a thick layer.


step eight: top the cookie bar dough with more chocolate pieces/chocolate chips. then, press these into the dough so that they’re not just sitting on the top.
step nine: bake for 18-22 mins until the chocolate chip cookie bars look crispy and golden brown. they should be too soft to pick once out of the oven, so let them cool for 10-15 minutes before slicing and picking up.

9 ingredients- 125g butter, salted (1/2 cup + 1 tbsp)
- 100g light brown sugar (1/2 cup)
- 50g granulated sugar (3 tbsps + 2 tsps)
- 1 tsp vanilla extract
- 1 large egg, room temperature
- 225g plain flour/all purpose flour (1 cup + 1/4 cup + 2 tbsps)
- 1/2 tsp baking soda
- 1/2 tsp baking powder
- 180g milk/dark chocolate, chopped or chocolate chips (1 cup)
method
11 steps- preheat and prepare: preheat your oven to 180 °C (350°F) and line an 8x8 inch baking tray with baking paper/parchment paper. set the tray aside.
- melt butter: in a large mixing bowl, add salted butter. place this in the microwave and melt in 30 second intervals, stirring in between, until the butter is completely melted.
- mix butter and sugars: in the melted butter, add brown sugar and granulated sugar. mix the sugars and butter together continuously until the sugar has dissolved in the warm butter.
- add egg and vanilla: once the butter and sugar mix has cooled slightly and is not too hot, add the egg and vanilla extract and mix those in until combined.
- add dry ingredients: add flour, baking powder and baking soda to the egg mixture. gently fold the dry ingredients in the wet ingredients until everything is combined and no streaks remain.
- add chocolate: add chunks of chocolate/chocolate chips and gently fold those in. the dough should be thick and sticky at this point.
- add to baking tray: press the cookie dough into your lined baking tray until it is spread out into a thick, even layer.
- extra chocolate: optional, but sprinkle extra chocolate on top of your cookie dough and press the chocolate so that it's slightly inside the dough.
- bake: bake the cookie dough for 18-22 minutes at 180 °C (350°F) until the top looks slightly golden brown and the edges are set. at this point, the middle should still be soft and somewhat underbaked.
- cool: let the cookie bars cool inside the tray, as they will be too soft to slice up or lift out. cool for about 10-15 minutes, then slice up. you can slice these up in the tray, or to make it easier, you can use the parchment paper to lift the cookie bars out and place them on a flat surface, then slice up.
